You should try to make a plot that won't end so fast if you want your Roleplay to last. Also, if it's done you might want to consider making a new plot, or even making a 'sequel' to your previous RPs. The problem with the last recommendation is, however, that they same players will be required for the sequel, and if they want to quit you'll have to find a new one that can interpret the character in a correct way.
The best thing to do is not make your plot be like a goal, but a starting point in the journey the characters will take. That way, it'll be slightly easier to join and keep the Roleplay going. The bad part about this is, however, that many will not know what to do if the plot doesn't give enough information so they can make their slight miny plots and character stories based out of it. You have to do it in a correct manner if you want it to work.
